'Unsung Heroes' of The Sea at Lilibet's
On Thursday 6 November, join us for intimate dinner in the private dining room of the newly opened Lilibet in Mayfair. A night dedicated to the unsung heroes of the sea. Owner & Chef Ross Shonhan will guide guests through an 12 dish menu from Executive chef Alex Harper, that reclaims the ‘unsung’: fish and shellfish too often discarded, yet remarkable in flavour, character, and story.
Set within a Mayfair townhouse at 17 Bruton Street, the site of Princess Elizabeth’s birth, Lilibet's marks a new chapter for Ross, whose career has taken him from Nobu and Zuma and founding Bone Daddies. Here, he returns to a setting where storytelling, precision, and theatre meet the quiet confidence of ingredient-led cooking.
For this one-off Sera experience, Ross shines a light on the species that rarely make the cut: the bycatch, the undiscovered, the underused. Across the evening, he will walk guests through each dish, explaining why Bonito is more than tuna’s cousin, why Wrasse deserves a place on every menu, why the head of a Hake carries greater depth than the fillet, and why Squat Lobster, small and sweet, is among the ocean’s true delicacies.
This is not a tasting menu, but a guided exploration. A dinner that tells the story of our waters and how we choose to eat them. Expect moments of delicacy and richness in equal measure: the saline purity of sea urchin, the quiet sweetness of Gurnard, the depth of a mash built from the humble and the ignored.
Spaces are extremely limited for this one-off dinner. An evening that brings together one of London’s most exciting new openings and a chef returning to his most expressive form.
