A Celebration of 'British Bluefin Tuna' with JÖRO Restaurant
A Night with JÖRO’s Luke French - celebrating British Bluefin Tuna
Tucked away in a converted paper mill near Sheffield, JÖRO has reshaped the way people think about British dining. The restaurant has been hailed as one of the most forward-thinking in the country, earning praise from critics across the board and a place among the Top 50 Restaurants in the UK, currently ranked 43rd best.
On Sunday 1 February, we bring Luke French to Counter 71 in London for an intimate, 16-cover counter experience. Known for his precise yet unpretentious cooking, Luke’s food draws on Nordic, Japanese and British influences, always rooted in fire and ingredient-led simplicity.
This one-night event turns the focus to an extraordinary ingredient: British Bluefin Tuna. Once thought impossible to find in these waters, bluefin have returned to Cornwall’s coast over the past few years. This is a story of the fish’s quiet return to British seas, and the skill it takes to do it justice.
Expect a service shaped by story rather than formality. Over the course of the evening, Luke will guide guests through the journey of the British bluefin, from its return to Cornish waters to the care and craftsmanship required to honour and protect it. Over ten courses, Luke builds a narrative around the bluefin, exploring its versatility through flavour, texture, and technique. From delicate raw preparations to slow-cooked depth, it’s a reflection of his precision, creativity, and respect for the fish, an experience that’s as educational as it is unforgettable.
It is a rare opportunity to experience one of the country’s leading chefs working with an ingredient few realise can be found here at all. A night that celebrates sustainability, seasonality, and the quiet magic of the British sea.
