On Saturday 16 May, Sera presents Otaku, an eighteen-course tasting menu by chef Max Posener, cooked out of his family home in North London. It is one of the best kitchens in London you have never heard of.

Max's training began at Ynyshir, the two Michelin-starred restaurant in Wales led by Gareth Ward, a kitchen defined by flavour above all else, and a deliberate refusal to follow the rules of traditional cooking. What began as a stagé became a full-time role, and several years working under one of the country's most uncompromising chefs. He later sharpened his skills in London at the one Michelin-starred Cycene.

Otaku is his own project, co-founded with sommelier Oliver Baggott. In Japanese, the word describes someone with an obsessive focus on the minutiae of a craft. Max chose it as a discipline. His cooking is built on bold, layered flavour. Acid cuts through richness, and plating is stripped back so the ingredient always leads.

The menu runs to eighteen courses, with langoustine, hamachi and beef as hero ingredients through the evening. Early courses move from Orkney scallop tempura, to bluefin tuna with shiso, to Loch Duart salmon with ponzu, tomato and oyster. Elsewhere, a chawanmushi with parmesan and N25 caviar; a crumpet with white soy and more caviar; a prawn dog; pad thai; beef cheek bourguignon with smoked eel; fillet with foie gras and shiitake. Desserts run from kaffir lime with passionfruit and ginger, to Dairy Milk with pork scratchings, to a birch syrup crème caramel, to a Manjari brownie with shiitake and Madagascan vanilla. Fudge for the road.

Working with established chefs is a privilege we don't take for granted. But finding a chef like Max, cooking quietly and not yet widely known, and putting him in front of our guests is the part of this job we love most.

The night is BYOW (bring your own wine), and cocktails are available to purchase on the night. Guests are welcome to bring wine or beer to share around the table, and Sera will pour a few of our own bottles alongside.

Due to the unique nature of this event, we are unable to accommodate dietary restrictions, or menu substitutions. Tickets are non-refundable.
