A one-night-only celebration of Sri Lankan flavours and the bounty of British ingredients from Paradise and The Water House Project. Dom Fernando of Paradise and Gabriel Waterhouse of The Water House Project are collaboratively launching a 7-course tasting menu with drinks pairing which showcases the best of each of their expertises, collabing on some courses and individually preparing others.

Chef-owner Dom Fernando is known for challenging the traditional expectations of Sri Lankan cooking; experimenting with bold flavours and serving food reminiscent of the island’s diverse cultural past. His Michelin Bib Gourmand restaurant Paradise has made a name for itself amongst the capital’s food scene, serving unapologetically fiery and contemporary Sri-Lankan dishes and cocktails. This special dinner will give guests a glimpse into what could be next for the Paradise brand: Dom and his team are excited to experiment with more unfamiliar flavours and to showcase that Sri-Lankan cuisine has moved beyond ‘rice and curry’ and is not bound by tradition.

Gabriel Waterhouse, after working at highly esteemed Innholders Hall and La Chapelle, launched a 12-person supper club for his friends and family in his Bethnal Green flat in 2015 where he saw immediate success. His bold decision to leave traditional fine dining and launch something of his own comes from his desire to “get rid of that disconnect between what goes on behind the scenes in a restaurant and what customers see.” In 2021, Gabriel opened The Water House Project known for its seasonal and sensational tasting menus, with just one seating per evening. Leaning into the concepts that made his supper clubs so famous, the reduction in barriers between a chef and their customers, Gabriel continues to foster connections between his team and his guests at TWHP.

This collaboration is a natural culmination of Gabriel’s and Dom’s friendship to date - Expect the fiery and adventurous flair that Dom is known for within a setting designed by Gabriel which showcases the bounty of British ingredients and precise techniques.

Due to the intricacy of the menu on offer, we are unable to cater to dietary restrictions on the night.
