Kyoto Counter with Charlie Taylor of Aulis

On Sunday 12 April, we return to Counter 71 for a 16-seat counter-dining experience led by Charlie Tayler of Aulis London.

Kyoto Counter draws directly from Charlie’s timetraining and cooking in Japan. The menu will reference kaiseki and Japanese counter dining traditions, with dishes prepared and presented across the counter.

For this dinner, Charlie will cook a thirteen-course tasting menu developed specifically for the evening. Crispy chicken skin with perilla vinegar and wasabi furikake; ember-cooked red shrimp with head sauce; kasu-cured chalk stream trout; monkfish karaage with oyster salt, and many more. The final dessert courses include; hojicha custard tart with burnt orange.

Charlie began his career in Sussex before moving to London to work at The Westbury. He later spent two years at two Michelin-starred The Ledbury. In 2016, he was selected by the Japanese Government as one of fifteen young chefs worldwide to undertake formal culinary training in Kyoto. He spent a year in Japan, including time at Michelin-starred Kinobu, a traditional kaiseki restaurant, working across all sections of the kitchen.

Charlie now leads Aulis London, the chef’s table from Simon Rogan, which was awarded its first Michelin Star in 2024.

For one evening at Counter 71, Charlie will present a Japanese-influenced tasting menu shaped by that period in Kyoto.
