Join us on November 10th for a Sera spin on the classic carvery experience, as we partner with Tom Booton and HG Walter to create. ‘Toby Tom’s Carvery’ and challenge the status quo on what really is the ‘Home of the Roast'.
Tom’s Carvery is a tongue-in-cheek, over the top, celebration of everything we love about the traditional British roast. However - forget everything you think you knew about buffets and gravy boats, as Tom does his own spin on the classic Sunday lunch in the elegant surroundings of The Grill by Tom Booton at The Dorchester. Whether it’s the seafood buffet tower replacing the classic salad and veg stations, or the table side carved HG Walter Prime Rib - this will be a roast to remember.
And we aren’t just talking about any Prime Rib - This is Prime Rib aged for 28 days in the HG Walter Himalayan salt chamber where cold salty air circulates, drawing out the moisture from the beef, giving it a fantastic beefy flavour. There are also rumours that Tom might be stuffing the yorkies with the rib cap…
A ticket includes table snacks followed by an unlimited seafood buffet, HG Walter Prime Rib carved at the table with all the trimmings, finishing with a pudding bar like you’ve never seen before.
Tom Booton’s career began at Le Talbooth before moving to London in 2012 to work under Alyn Williams at the Michelin-starred Westbury. He then spent three years at L'Autre Pied, rising to sous chef by the age of twenty-two. Tom gained international experience with stages in Iceland, New York, and Copenhagen, working at top restaurants like Dill and Amass.
Returning to London, Tom became sous chef at Dabbous before being invited back to The Westbury as head chef at just twenty-four, where he retained its Michelin star. In 2019, Tom took the helm at The Grill at The Dorchester, becoming its youngest ever head chef, and re-imagining the modern British Grill.
HG Walter is an independent family-run butcher committed to providing every professional chef and home cook with an exceptional product to create exceptional food.
Please note that like all Sera events, some tables will have communal seating, offering the opportunity to engage with other guests.
There is a limited pescatarian main course option available, however, due to the unique nature of this event, we are unable to accommodate additional dietary restrictions.
