What if one of London’s most meticulous, quietly brilliant chefs opened a ramen shop — just for a day?
Taiji Maruyama is the chef-owner of Maru, an intimate eight-seat omakase counter in Mayfair known for its uncompromising approach to seasonality, Japanese craft, and Edomae-style sushi — with everything, from the rice to the soy sauce, painstakingly prepared in-house.
Before opening Maru, Maruyama trained at some of the most revered Japanese restaurants in London, including Nobu and Beaverbrook, before going on to head kitchen operations at Taka. Maru was his first solo project — a restaurant the Michelin Guide praised for its “painstaking preparation” and “exceptional attention to detail,” describing his food as “refined, heartfelt, and deeply personal.”
On June 1st - Maruyama turns his obsessive eye to ramen. Hosted at his sister restaurant Taka - The Magic of… Ramen is a one-off exploration of what ramen could be when viewed through the same lens of care, elegance, and depth that defines his work.
