On May 3rd, Sera & Ibai invites you to experience the bold spirit of the Basque Country as we present: “If I had a… Basque Cider House” — a one-day-only celebration of the legendary ‘sagardotegi’ tradition, and the very first time Ibai opens its door on a Saturday.
Rooted in the hills of the Basque Country, the sagardotegi — meaning “cider house” in Euskara — began as simple farmsteads where locals would come to taste and buy the season’s freshly fermented cider. Over time, these tastings turned into impromptu feasts, with grilled meats, salt cod and tortilla shared around long communal tables.
Ibai will channel the heart of this tradition with a ‘Sidreria’ tasting menu inspired by the classic dishes found in a sagardotegi — Expect dishes such as; Espelette Saucisson, Salt Cod Tortilla, Basque Boudin Noir and more. To drink? Cider, naturally. All you can drink.
Led by Executive Chef Richard Foster, formerly of Chiltern Firehouse, Ibai is a Basque-inspired restaurant in the heart of the City. Celebrating the fire-driven cooking and produce-led cuisine of the Basque Country, including the lesser known French side. Ibai owner Nemanja Borjanović was one of the first to introduce Galician blond beef to London, helping spark the city’s obsession with aged Spanish steak. He was also behind the opening of acclaimed Basque-inspired restaurants Donostia and Lurra, where he met his now business partner, Will Sheard. Ibai is a tribute to the smoky grills, mountain flavours, and coastal freshness of the Basque region.
