OVERVIEW

A weekend at Palé Hall, in Snowdonia, North Wales, hosted by Luke Selby — one of the most accomplished British chefs of his generation.

Luke joined Palé Hall as Chef Partner in January 2026, after his tenure as executive chef at Le Manoir aux Quat’Saisons under Raymond Blanc. Before Le Manoir, he was head chef at Evelyn’s Table, the Michelin-starred chef’s counter in Soho. Earlier in his career, he held senior positions at Restaurant Gordon Ramsay and Hide.

At Palé Hall, Luke leads the entire food and beverage operation, as well as the entire guest experience across the estate.

At the centre of his work is Hearth: a private chef’s table set inside the original Victorian kitchen of the main house, with an open kitchen positioned tableside. Hearth is Luke’s development table, where he tests and refines new dishes before they enter the main restaurant menu. Luke’s menu at Hearth is a rare preview of the dishes in development for Luke Selby’s new fine dining restaurant, set to open in the coming months. The room is where his work begins.
Across the weekend, guests will access Luke and Palé Hall in ways that aren’t typically open to the public; from dinner at Hearth and a behind-the-scenes tour of the farm, to pulling pints in the pub and finishing with an open-fire Sunday roast in the estate’s private shoot lodge.

02  PALÉ HALL & THE BRYNTIRION INN

Palé Hall is one of the most decorated country houses in the United Kingdom. A five-star Relais & Châteaux property on the edge of Eryri National Park, set within fifteen acres of riverside parkland in the Dee Valley. Built in 1871, the estate has hosted Queen Victoria, Winston Churchill, and was acquired by the Duke of Westminster in the 1950s for its shooting.

The Bryntirion Inn is a 300-year-old country pub on the Palé Hall estate, dating to 1695. The Bryntirion was named in the Sunday Times Top 50 Hotels in the UK for 2026, and added to the Michelin Guide in October 2025.

Today, under the new ownership of Anthony and Donna Cooper-Barney, the estate is entering a new chapter — anchored by Luke and the food operation he now leads across it.
03  ITINERARY

Day One · Arrival + Hearth  21 AUG

• Dinner at Hearth, Luke’s private chef’s table and development kitchen, inside the original Victorian kitchen

• A behind-the-scenes tour of the farm and estate with Luke Selby and Head Grower John Rowlands
• Lunch on the summer terrace; sharing plates served outdoors
• Welsh wine tasting at the hotel
• Pre-dinner pints at The Bryntirion Inn, poured by Luke
• Dinner at The Bryntirion Inn

Day Three · Shoot Lodge + Departure  23 AUG
• Breakfast at Palé Hall
• An open-fire Sunday roast at the estate’s shoot lodge, cooked by Luke Selby
• Estate cars to Chester station

04  ACCOMMODATION

Across the two nights, guests are accommodated across two properties on the Palé estate.

The Bryntirion Inn
A 300-year-old country pub on the Palé Hall estate, dating to 1695 and recently restored at a cost of £1m. Named in the Sunday Times Top 50 Hotels in the UK for 2026, and added to the Michelin Guide in October 2025. Saturday’s dinner and pre-dinner pints both take place here.

A five-star Relais & Châteaux country house with eighteen individually styled bedrooms.


Single guests are accommodated at The Bryntirion and couples at Palé Hall, reflecting the difference in room sizes. All guests have full access to the wider estate across the weekend, including the spa, gym, and treatment rooms, the Victorian wine cellar, and the lounge bar. The estate also offers additional activities — fly fishing, whisky tastings, ceramics, and shooting among them — all bookable on arrival, or ahead of your visit.

Upgrade  ·  Single guests who would prefer a larger room may upgrade for an additional £400 per person.

06  WHAT’S NOT INCLUDED

• Travel to and from Chester

• Travel insurance

• Drinks taken outside the included meals, including drinks at the Saturday pub dinner

• Spa treatments and additional estate activities

• Anything taken outside of the planned itinerary

07  GETTING THERE

• Chester is approximately 2 hours from London Euston by direct train. Trains run every hour, with 10:02 or 11:02 the recommended departure times

• Palé Hall’s cars meet guests at Chester station on arrival, and return guests to the station after lunch on the final day; inbound and outbound train details should be shared on booking

• Guests arriving by car should travel directly to the estate at Llandderfel, Bala, Gwynedd, LL23 7PS

• The trip concludes after lunch at the shoot lodge on Sunday 23 August

08  FAMILY

Children are welcome to join the trip during daytime activities. Palé Hall offers on-site babysitting to cover the evening meals, the wine tasting, and the Hearth chef’s table. Please indicate at the time of booking if you intend to travel with children.
09  PRICING

£1,250  PER PERSON
To reserve your place, a non-refundable deposit of £250 per person is required at the time of booking via the purchase tickets button.

The remaining balance will be charged on arrival at Palé Hall. Your place is confirmed once payment has been received.

Single guest upgrade to a main house room: £400 per person.

Cancellation Policy. Bookings, including the deposit, are considered final and non-refundable.
